Never use ammonia as a substitute for ammonium carbonate, they are two different products. During cooking, an ammonia smell will develop which however will disappear completely when the biscuits are cooled: it is necessary to pay particular attention to opening the oven and to ventilate the kitchen well to avoid breathing ammonia vapours.ĪTTENTION: use only ammonium carbonate (baker’s ammonia) It is advisable to use this leavening agent primarily for biscuits, such as ammonia cookies, and not a cake or muffin.
